    Christmas Tree

     
    The tree is up, it's 150 cm tall and has fibre optic lights built in. Not too tall, just the right size for our place. My little helper was really excited with decorating it. He even chose the theme. Smart eh?

    Holiday

     
    P & J came up from Sydney to celebrate J's big 3-0. A weekend full fun and surprises. H and I had dinner with P & J. P was left at hotel with a lovely sitter. And because J loaned him his PS portable game console, P was glued to it the whole night. But he did manage to have a bit of a read and colouring said S, out sitter for the night. I think I might get her again when we go down the coast. Schoolies was on, which we all forgot when we booked our holiday. I don't mind crowds, but hoards for screaming year 12's was a bit TOO much. I ended up having a headache before we called it a night. P arranged for special gift for he hubby, which he enjoyed FULLY till the end.  E came to join us for drinks. We had a full day and by the time it was half past 12 I was buggered.
    Day 2 was spent at Movie World. I went on the Escape, 0-100 km/h in 2 secs was beyond terrifying for me. I screamed my lungs out, half way through the ride I closed my eyes. H said I shouldn't have done that. But the speed was just zooom! I did enjoy it. Maybe next time I'll ride it again, provided that it's the 1st ride of the day and that I have not eaten 30 mins before. Heaps of things to do, Shrek 4D was fantastic, P got scared, but eventually got over it. Eating at Ric's Cafe American was neat, a replica of the cafe from Casablanca. They even had the piano, but it was a miniature version of it. Then we went to The Matrix Exhibit, that was awsome! Props and some of the sets from the movie was on exhibit. One of Morpheus's costume was a Bonds singlet!  Taking photos was allowed, so we pretended to be in the movie. We saw The Police Academy stunt show, which was a bit of a laugh and half. Overall it was a long and fun day. It didn't matter that we were walking for a few hours just discovering what the theme park had to offer.
    Monday was our very last chance to frolic in the beach. We were only there for a few hours and I got sun brunt. P didn't want to come home, he wouldn't leave the beach!
    Harbour Town is a huge shopping complex. With designer labels every where, it's pretty easy for one to spend oodles and oodles of moolah! I would have done the same, having H around detered me from spending. This complex is yet to be explored by moi, that would happen sometime soon.
    Driving back was quick, by the time I got to sit down on the couch I just slumpped. Good news though, I didn't get an "asthma" attack over the weekend. That is a GOOD holiday.
    P & J's return flight got pushed till late monday evening. They should have stayed the night at our place they could have seen Brissie.

    Chilli Linguini

    For someone who loves salty and sour food this will do the job. One sunday afternoon I ordered this pasta dish at a cafe. I couldn't beleive I had to pay $13.50 for a serving! A week after I decided to make it at home. I went to the shops and bought my ingredients and whipped up a quick lunch for  myself. H is not a fan of proscuitto but he said it tasted like the one that I had at the cafe. It was far cheaper than the other. Maybe next time I'll try it with jamon serrano. Now when I feel like I need something sour and salty this would suffice.

    Chilli Linguini 
    Ingredients:

    • 1 small packet of linguini pasta
    • 200 grams prosciutto
    • 2 lemons
    • snowpeas
    • chilli flakes 
    • olive oil

    Cook pasta as per instructions on the packet. Cut prosciutto and snowpeas in bite size pieces. Juice 2 lemons. Drizzle olive oil in pan, add prosciutto and cooked pasta. Stir in snowpeas and lemon juice, add chilli flakes, salt and pepper. If sauce is too dry add a bit of the the pasta water to make it a bit runny. Serve hot with fresh chopped parsley.

    Baked Salmon in Coconut

    When having plain fish is not enough, this is a sure way to punch it up a bit. We we're craving for something out of the ordinary and it came out really nice. I have been lucky that my little herb pot is yealding chives, basil and parsley. I tried to grow my own corriander but it died on me. My lemon grass is growing as well. Can't wait to harvest them soon.

    Baked Salmon in Coconut
    Ingredients:

    • 1 salmon cutlets
    • 1 tin of coconut cream/milk
    • lemon grass
    • chives
    • corriander
    • lime
    • fish sauce

    In a bowl mix coconut cream/milk with chopped corriander, chopped chives and chopped lemon grass. Squeeze some fresh lime and add some fish sauce. Sprinkle chilli flakes to give is a kick. Bake for 20-25 mins. Serve with your choice of asian salad and rice.
